
So I recently decided to become a vegan after watching the documentary “what the health”. One of the things that has helped me with the transition are meat substitutes. The recipe below is quick and easy and can be made under 30 minutes.
Ingredients
Meat substitutes (beef, chicken, sausages, etc I used quorn)
Tomato Passata
Salt
Pepper
Onions (Diced)
Garlic
Oil
Mixed bag of stir fry Vegetables
Method
Fry onions and garlic in oil, add stir fry vegetables and cook for a few minutes until softened. pour in Passata, add seasoning and spices, then bring to a boil. Pour in your meat substitute and stir until combined. let simmer until its all cooked. Serve hot on a bed of brown rice or pitta bread. Enjoy!
