Homemade Butter scones with tuna sweetcorn. #Simplelunch


All you need..

Pláin flour

Cold butter






Make scones in batches and buy tuna in packs. Use for quick meals.

Dark chocolate breakfast scones

Very easy to make. All under half an hour. Make large quantities and freeze for later.


Self raising flour

Dark chocolate (chopped) I used 70 percent organic dark chocolate.

Nut milk

Dairy free butter

Brown sugar



In a bowl, quickly mix butter with self raising flour (finger tips) until it resembles fine bread crumbs. Stir in dark chocolate and brown sugar to taste, then pour in nut milk. Combine soft (but not wet) dough, flatten and cut to desired thickness. Lay on baking tray and bake at 200 degrees for 10-15 minutes. Enjoy. Delicious.

Almond Scones

I have recently gone into a phase of increasing the protein content in all my meals; almond/eggs are my preferred choice.

Be warned! These almond scones are not only light and fluffy, but tasty.



Ground Almond

Self-raising flour


1 tbs honey

1 egg

1 tsp salt

Flaked almond




Pre heat oven, 180 degrees

Lightly sprinkle baking tray with flour

Measure the quantity of ground almonds you want and add half the amount of self raising flour. With finger tips, rub in butter; then add flaked almonds, honey, salt, egg and milk, enough to make a soft (but not wet or stiff ) dough.

Pat dough on a floured surface and cut to desired thickness. Place on baking tray and brush with egg wash. Bake in the oven for 10 minutes. Take out and leave to cool on a wire rack. Enjoy!
