
Homemade Tangerine Sponge Cream Cake

Tips…
Soak your choice of dried fruits overnight with White Wine and Dark Rum.
Bake in an oven with hot water tray
Bake cake at 150 degrees for 1.5 hours or until skewer comes out clean
Use both soaked fruits and liquid in cake batter
A great way to use summer berries from your garden… Delicious 😋
Very easy to make…
In one bowl, whisk caster sugar, eggs, self raising flour, pinch of salt, and butter until fluffy with no lumps.
Pour into greased and lined cake pans.
Bake at 180 degrees in the middle of the oven for 30 minutes
Cool cake on a wire rack..
Whisk double cream until stiff, cover cake with a thick layer of whisked cream and decorate with choice of berries. Enjoy!
Note… Add food colouring to cream or cake batter for a colourful caked.
Note…you can substitute sugar for sweeteners.
