
Coconut is my favourite nut; it doesn’t just tastes and smells good, everything in a coconut can be used for something. This is a very simple and easy meal that can be made in no time.
Ingredients
Fresh coconut
Frozen vegetables; carrot, peas, corn, e.t.c. (defrosted)
Rice
Stock cubes
Curry powder (For colour-optional)
Thyme
Pepper
Salt
Oil
Method
Per boil rice and set aside. Chop coconut and and blend with hot water in a food processor. In a large pot, sieve in coconut juice, stir in rice, vegetables and the rest of the ingredients. Check for taste and make sure the coconut juice in the pot is at the same level with rice. Cover pot and cook on lowest heat till water is completely dried and rice is cooked, fluffy but not sticky. Pout rice out into another dish to cool (this prevents rice from cooking any further) before storing in the fridge or serve hot immediately.
