Salmon is one of the most nutritious foods. They are easy to cook and are usually accompanied with vegetables.
Although Salmon, especially fresh ones can be very pricey; adding inexpensive leafy greens beside your oily fish, will make a filling and healthy meal.
This quick and easy recipe can be eaten for breakfast, lunch or dinner. Why not try it for breakfast on a cold (or not) Christmas morning? instead of cereal or a full English/Irish breakfast.
All you need is….
Salmon
Spinach
Salt
Pepper
Olive oil
Drizzle a small amount of Olive oil into a pot, cook salmon (medium/ low heat) on all sides. Peel skin off. Pour in lots of spinach and season with salt and pepper. With a wooden spoon, gently push down spinach (be careful not to break the salmon) cook for a further minute or two or until spinach has withered. Serve immediately. Enjoy.
Note: You can also use Kale or any other leafy green you fancy.
I’d probably add some garlic,tarragon and lemon zest to that! Looks good!
